Description

This exotic chicken with apricots and green apple is a dish that I often prepare when I want something tasty and quick. The contrast between the sweetness of the dried apricots and the tartness of the Granny Smith green apple is simply delicious. Coconut milk and curry create an enveloping sauce that goes perfectly with the chicken. Ideal to serve with basmati rice for a complete and satisfying meal. The preparation is really simple and quick, perfect for a weekday dinner or an informal Sunday lunch. A touch of lemon zest at the end gives freshness and vibrancy to the dish.

Ingredients (9 ingredients)

  • 500 g Chicken breast
  • 1 piece Granny smith apple
  • 50 g Dried apricots
  • 0.5 piece Lemon (zest)
  • 400 ml Coconut milk
  • 2 piece Spring onions
  • 2 tsp Curry
  • 30 ml Extra virgin olive oil
  • 1 pinch Salt

Preparation (6 steps)

Preparation of the ingredients

Cut the chicken breast into bite-sized pieces of about 2-3 cm. Cut the green apple into cubes and the dried apricots into strips. Finely chop the spring onions.

Brown the chicken

Pour a drizzle of extra virgin olive oil into the bowl. Add the diced chicken and brown for 5 Min./120°C/Stufe 1.

Sauté the spring onions, apple and apricots

3 min/248°F/Speed 1 120

Remove the chicken from the bowl and set aside. Add another drizzle of extra virgin olive oil, the chopped spring onions, the cubed green apple and the apricots into strips. Sauté for 3 Min./120°C/Stufe 1.

Combine the chicken and season

Add the chicken back into the bowl. Season with salt and cook for 2 Min./100°C/Stufe 1.

Add coconut milk and curry

Thermomix® Setting
10 min/194°F/Speed 1/Linkslauf 90 Reverse

Add the coconut milk and curry. Cook for 10 Min./90°C/Stufe 1/Linkslauf, until the sauce has thickened.

Flavor and serve

Thermomix® Setting
10 Sec./Speed 1/Linkslauf Reverse

At the end of cooking, grate a little lemon zest into the bowl and mix for 10 Sec./Stufe 1/Linkslauf. Serve hot with basmati rice.
