Description

This dish of chicken stewed with autumn vegetables is a real treat for the taste buds. I often prepare it when the days get shorter and the desire for comforting dishes is felt. The chicken, tender and tasty, is imbued with the aromas of button onions, smoked bacon and button mushrooms. The potatoes, melting at will, complete this family and convivial dish. A little dry white wine and poultry stock enhance the whole. It is a perfect dish for a Sunday lunch or a dinner with friends. Do not hesitate to accompany it with a green salad for a touch of freshness.

Ingredients (13 ingredients)

  • 1 morceau Chicken
  • 3 bunch Button onion
  • 150 g Smoked bacon
  • 18 piece Button mushroom
  • 8 piece Potato
  • 15 cl Dry white wine
  • 1 l Poultry stock
  • 1 c. à soupe Flour
  • 4 brin Thyme
  • 30 g Butter
  • 5 cl Olive oil
  • Salt
  • Pepper

Preparation (7 steps)

Preparation of the vegetables

Peel the button onions. Cut the smoked bacon into small sticks. Clean and cut the button mushrooms into quarters. Peel the potatoes and cut them into dice.

Browning the chicken

In a frying pan, brown the pieces of chicken for 15 minutes. Set aside on a plate.

Cooking the onions and bacon

Thermomix® Setting
10 min/248°F/Speed 1 120

Put the button onions, smoked bacon, diced potatoes and 2 tbsp of poultry stock in the Thermomix bowl. Sauté 10 Min./120°C/Stufe 1.

Adding the chicken and flour

3 min/248°F/Speed 1 120

Put the pieces of chicken back in the bowl. Sprinkle with the flour and let it cook for another 3 Min./120°C/Stufe 1.

Deglazing with white wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour the dry white wine into the bowl and let the alcohol evaporate 3 Min./Varoma/Stufe 1 without the measuring beaker.

Final simmering

Thermomix® Setting
30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the button mushrooms, poultry stock, thyme, salt and pepper. Cover and simmer 30 Min./100°C/Stufe 1/Linkslauf.

Correction of the seasoning

Correct the seasoning if necessary and serve very hot.
