Description

This Venezuelan chicken in dark sauce is an absolute taste sensation! I have been making it for some time and it is always well received. The combination of sweet and savory flavors makes this dish special. The chicken is marinated in a marinade of soy sauce, mustard and garlic and then braised in a caramelized sugar sauce. The sauce becomes nice and thick and shiny. Perfect for a cozy dinner with friends or family. Serve with rice or mashed potatoes. A truly delicious and simple dish that you must try!

Ingredients (7 ingredients)

  • 1000 g Chicken legs
  • Oil
  • 4 tbsp Sugar
  • Salt
  • 4 tsp Soy sauce
  • 2 Zehen Garlic
  • 1 tbsp Mustard

Preparation (7 steps)

Prepare garlic and stir marinade

Thermomix® Setting

Put 2 cloves of garlic in the mixing bowl and chop for 3 sec./level 7. Scrape down with the spatula. Add salt, mustard and soy sauce and mix for 10 sec./level 3.

Marinate chicken

Put the marinade in a bowl. Add 1 kg of chicken legs and mix well so that the chicken is completely covered with the marinade. Cover and leave to marinate in the refrigerator for 30 minutes.

Caramelize sugar

Put some oil in a pan and add 4 tbsp of sugar. Melt over medium heat until the sugar caramelizes and turns a dark color. Make sure the sugar does not burn.

Fry chicken

Add the marinated chicken to the pan with the remaining marinade to the caramelized sugar. Fry on both sides until golden brown.

Simmer chicken

Put the lid on the pan and simmer the chicken over medium heat for approx. 25 minutes. For chicken with bones, extend the cooking time by 10 minutes.

Reduce sauce

Remove the lid from the pan and let the sauce reduce for a further 10 minutes until it is thick and shiny.

Let rest and serve

Turn off the heat and let the chicken rest in the sauce for 10 minutes before serving.
