Description

These cinnamon buns are simply irresistible! The scent of cinnamon and freshly baked dough fills the whole house. I especially like to make them on weekends for brunch or during the Advent season. Thanks to the preparation in the Thermomix®, the dough is quickly kneaded and the snails are guaranteed to succeed. The combination of soft dough, the sweet cinnamon filling and the crunchy pearl sugar is simply heavenly. An absolute must for all cinnamon lovers! If you like, you can add some grated orange peel to the dough.

Ingredients (15 ingredients)

  • 250 ml Milk
  • 80 g Butter
  • 0.5 cube Fresh yeast
  • 500 g Flour
  • 50 g Sugar
  • 1 Pck. Vanilla sugar
  • 0.5 piece Organic lemon - zest
  • 2 Prisen Salt
  • 1 piece Egg
  • 100 g Butter - soft
  • 4 tbsp Cinnamon
  • 40 g Sugar
  • 2 tbsp Milk
  • 1 piece Egg yolk
  • 2 tbsp Pearl sugar

Preparation (11 steps)

Heat milk and butter

Thermomix® Setting
3 min/99°F/Speed 2 37

Add 250 ml milk and 80 g butter to the mixing bowl and heat for 3 min./37°C/speed 2.

Add yeast

Thermomix® Setting
20 sec/Speed 3

Crumble 1/2 cube of fresh yeast into the mixing bowl and stir for 20 sec./speed 3.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g flour, 50 g sugar, 1 packet vanilla sugar, zest of 1/2 organic lemon and 2 pinches of salt to the mixing bowl. Add the milk-yeast mixture and 1 egg and knead for 3 min./kneading stage to a smooth dough.

Let dough rest

Place the dough in a bowl, cover and let rest in a warm place for 45 minutes.

Prepare filling

Mix 100 g soft butter, 4 tbsp cinnamon and 40 g sugar in a bowl.

Roll out and spread dough

Roll out the dough into a rectangle on a lightly floured work surface. Spread with the cinnamon-butter-sugar mixture. Roll up the dough from the long side.

Shape cinnamon buns

Cut the dough roll into 8-10 pieces and place in a greased baking dish.

Let cinnamon buns rest

Let the cinnamon buns rest in the baking dish for 20 minutes.

Prepare glaze

Whisk together 2 tbsp milk and 1 egg yolk in a small bowl.

Brush cinnamon buns

Brush the cinnamon buns with the milk-egg yolk mixture and sprinkle with 2 tbsp pearl sugar.

Baking

Bake the cinnamon buns in a preheated oven at 180 degrees top and bottom heat for 25 minutes.
