Ingredients (15 ingredients)

  • 3 Stück Eggs, size M - at room temperature
  • 300 g Hokkaido pumpkin
  • 300 g Flour, Type 405
  • 200 ml Vegetable oil, neutral
  • 150 g Sugar
  • 100 g Hazelnuts, ground
  • 0.5 Stück Organic orange
  • 1 Päckchen Bourbon vanilla sugar
  • 0.5 Päckchen Baking powder (8 g)
  • 2 TL Cinnamon
  • 1 Prise Salt
  • Butter for the pan
  • 150 g Powdered sugar
  • 3 EL Orange juice
  • Pumpkin seeds

Preparation (10 steps)

Preheat oven and prepare pan

Preheat the oven in good time to 180 °C top/bottom heat. Grease the 26 cm loaf pan with butter and dust with flour. This is a preparation step without Thermomix setting.

Prepare pumpkin and orange

Wash 300 g of Hokkaido pumpkin well, dry, halve, core and cut into coarse pieces. Wash the 1/2 orange with hot water, dry and grate the peel with a zester for 1 tsp orange zest and set aside. This is a preparation step without Thermomix setting.

Chop pumpkin

Place the coarse pumpkin pieces in the mixing bowl and chop for 5 sec/level 5. Scrape down from the edge with the spatula.

Mix eggs, oil, sugar and vanilla sugar

30 sec/Speed 4

Add 3 room-temperature eggs, 200 ml neutral vegetable oil, 150 g sugar and 1 packet of Bourbon vanilla sugar to the mixing bowl and mix for 30 sec/level 4.

Add flour mixture

Add 300 g flour, 100 g ground hazelnuts, 8 g baking powder, 1 tsp orange zest, 1 pinch of salt and 2 tsp cinnamon to the mixing bowl and stir in for 30 sec/level 3. Scrape down from the edge with the spatula.

Fold in pumpkin

Remove the chopped pumpkin from the mixing bowl and carefully fold into the dough with a spatula. This is a preparation step without Thermomix setting.

Bake

Pour the dough into the prepared loaf pan and bake in the preheated oven on the second rack from the bottom at 180 °C top/bottom heat for approx. 50 minutes. Do a toothpick test. This is a preparation step without Thermomix setting.

Let cool

Remove the cake from the oven and let it steam in the pan for 30 minutes, then carefully turn it out onto a wire rack and let it cool completely. This is a preparation step without Thermomix setting.

Mix orange juice and powdered sugar

For the topping, add 3 tbsp orange juice and 150 g powdered sugar to the mixing bowl and mix for 20 sec/level 3.

Apply glaze and decorate

Spread the glaze on the cooled cake. If desired, roast pumpkin seeds in a pan without fat (or natural) and spread on the glaze. This is a preparation step without Thermomix setting.
