Description

This recipe for turkey medallions in creamy herb sauce is a real treat! The tender medallions, wrapped in savory bacon, harmonize perfectly with the aromatic herb sauce and sweet tomatoes. I like to make this dish when I want to cook something special for my family. The preparation is a bit more complex, but the result is worth it. It tastes particularly good with fresh Spätzle. An ideal dish for a festive dinner or just to treat yourself.

Ingredients (10 ingredients)

  • 4 piece medium-sized Onions
  • 3 piece Tomatoes (e.g. beef tomatoes)
  • 600 g Turkey breast
  • white Pepper
  • Salt
  • 4 slice Breakfast bacon
  • 200 g Whipping cream
  • 1 tsp dried Herbs of Provence
  • 1 tbsp Cornstarch
  • Herbs for garnish (optional)

Preparation (10 steps)

Prepare onions

Thermomix® Setting
3 sec/Speed 5

Peel and halve 4 medium-sized onions. Place the halved onions in the mixing bowl and chop for 3 sec./speed 5. Scrape down from the edge with the spatula.

Prepare tomatoes

Wash 3 tomatoes (e.g. beef tomatoes) and cut into thick slices. Set aside.

Prepare meat

Wash and pat dry 600 g turkey breast. Cut into 4-6 thick medallions. Season with white pepper and some salt. Wrap each with 1 slice of breakfast bacon, secure with skewers if necessary.

Fry medallions

Fry the medallions in a pan in hot oil for 3-4 minutes per side, remove and set aside.

Fry onions

Fry the onions in the frying fat of the medallions in the pan, remove and set aside.

Fry tomatoes

Fry tomatoes in the frying fat from each side for approx. 2 minutes in the pan.

Fill casserole dish

Fill medallions, tomatoes and onions into a greased casserole dish.

Prepare sauce

Thermomix® Setting
20 sec/Speed 3

Place 200 g whipping cream, 1 tsp dried herbs of Provence and 1 level tbsp cornstarch in the mixing bowl. Season generously with salt and pepper and mix for 20 sec./speed 3.

Pour sauce over medallions

Pour the sauce over the medallions in the casserole dish.

Bake casserole

Place the casserole dish in the preheated oven (electric oven: 175 °C/convection oven: 150 °C/gas: level 2) and bake for 25-30 minutes. After baking, garnish with fresh herbs if desired.
