Description

Delicious mandarin cake, perfect for winter and festive occasions.

Ingredients (12 ingredients)

  • 4 Stück Eggs
  • 2 Tassen Sugar
  • 3 Päckchen Vanilla sugar
  • 1.5 Tassen Oil
  • 1 Tasse Sparkling water
  • 3 Tassen Flour
  • 3 TL Baking powder
  • 4 Dosen Mandarin oranges
  • 3 EL Flaked almonds
  • 400 g Whipping cream
  • 500 g Sour cream
  • 2 EL Cinnamon sugar

Preparation (9 steps)

Beat eggs, sugar and vanilla sugar

Put eggs, sugar and 1 packet of vanilla sugar into the mixing bowl and beat with the butterfly 3 min./speed 3.5.

Add oil and water

Add oil and sparkling water and stir in 20 sec./speed 2.

Mix flour and baking powder and stir in

Mix flour and baking powder, add to the mixing bowl and stir in 30 sec./speed 3.

Spread dough on baking sheet

Grease a baking tray (approx. 35 cm x 39 cm). Spread the dough evenly on it with a dough scraper. Bake in a preheated oven (electric oven: 175°C/convection oven: 150°C/gas mark 2) for approx. 20 minutes. Let cool.

Drain mandarins

Drain the mandarins on a sieve.

Roast flaked almonds

Roast the flaked almonds in a pan without fat until golden yellow and let them cool.

Whip cream until stiff

Pour whipping cream into the mixing bowl and whip until stiff with the butterfly 2 min./speed 3.5. Gradually sprinkle in the remaining 2 packets of vanilla sugar.

Fold in sour cream

Add sour cream or crème fraiche and fold into the whipped cream for 10 sec./speed 2 reverse.

Top the cake

Spread drained mandarins, except for a few for decoration, on the base. Spread the cream-sour cream mixture on top with a palette knife or knife, being careful not to smooth the surface too much. Top with remaining mandarins and sprinkle with flaked almonds. Sprinkle with cinnamon sugar as desired.
