Description

This curd cream cake with tangerines is a real classic that should not be missing on any coffee table! I especially like to make it in winter when tangerines are in season. The cake is wonderfully juicy and creamy, with a slightly sour touch from the curd and a fruity note from the tangerines. The preparation with the Thermomix® is very easy and the cake is guaranteed to succeed. An absolute favorite recipe that is always well received by friends and family. Ideal for birthdays, Christmas or just to enjoy!

Ingredients (17 ingredients)

  • 180 g Flour
  • 80 g Sugar
  • 80 g Butter
  • 1 piece Egg
  • 1 Pck. Vanilla sugar
  • 1 Pck. Lemon zest
  • 175 g Sugar
  • 2 Pck. Vanilla sugar
  • 3 piece Egg
  • 750 g Curd
  • 250 g Sour cream
  • 3 Pck. Vanilla sauce powder for cooking
  • 300 ml Oil
  • 1 can Tangerine(s)
  • 1 Pck. Cake glaze clear
  • 2 tbsp Sugar
  • 250 ml Water

Preparation (10 steps)

Prepare shortcrust pastry

Thermomix® Setting
2 min/Kneading speed

Put 180 g flour, 80 g sugar, 80 g butter, 1 egg, 1 packet of vanilla sugar and 1 packet of lemon zest into the mixing bowl and knead for 2 min./kneading stage to form a shortcrust pastry.

Cool dough

Remove the shortcrust pastry from the mixing bowl, form a ball and chill in the refrigerator for approx. 1 hour, wrapped in cling film.

Prepare springform pan and distribute dough

After cooling, roll out the dough on a lightly floured work surface and place in a 26 cm springform pan, forming an approx. 1 cm high edge.

Prepare topping

Thermomix® Setting
8 min/Speed 4

Put 175 g sugar, 2 packets of vanilla sugar and 3 eggs into the mixing bowl and whisk for 8 min./speed 4 until fluffy.

Prepare curd mixture

Thermomix® Setting
30 sec/Speed 3

Add 750 g curd, 250 g sour cream, 3 packets of vanilla sauce powder and 300 ml oil and stir in for 30 seconds/speed 3.

Put topping on dough

Pour the curd mixture onto the shortcrust pastry base in the springform pan. Spread a large can of tangerines (approx. 850 g), drained, on top.

Bake cake

Bake the cake in a preheated oven at 175 °C top/bottom heat for approx. 90 minutes. Tip: To prevent the cake from cracking and collapsing too much, wrap the springform pan with damp kitchen paper and then with aluminum foil before baking.

Let the cake cool down

After baking, let the cake cool down with the oven door slightly open.

Prepare cake glaze

Thermomix® Setting
7 min/212°F/Speed 2 100

Put 250 ml water, 1 packet of cake glaze and 2 tbsp sugar into the mixing bowl and bring to the boil for 7 min./100°C/speed 2.

Spread cake glaze

After cooking, spread the cake glaze on the cooled cake and let it set.
