Description

These pickled radishes are a real eye-catcher and a delicious addition to any snack! I especially like to make them in the spring when the radishes come fresh from the market. The spicy vinegar stock with garlic, mustard seeds and cloves gives the radishes a pleasant spiciness and acidity. They are super easy to prepare and can be kept in the refrigerator for several weeks. Perfect as a small snack, on bread or as a side dish for grilling. An absolute must for all radish lovers! Preparation with the Thermomix® is very easy and saves time.

Ingredients (10 ingredients)

  • 1000 g Radishes
  • 2 clove Garlic
  • 600 ml White wine vinegar
  • 300 ml Water
  • 140 g Sugar
  • 2 tsp Salt
  • 2 tbsp Mustard seeds
  • 4 piece Cloves
  • 2 tsp Black pepper
  • 2 tsp Peppercorns

Preparation (4 steps)

Prepare radishes and garlic

Clean the radishes, wash thoroughly and cut into thin slices. Peel the garlic and cut into thin slices as well. Layer the radish and garlic slices evenly in sterile preserving jars (200-300 ml).

Prepare vinegar stock

Thermomix® Setting
10 min/212°F/Speed 2 100

Put 600 ml white wine vinegar, 300 ml water, 140 g sugar, 2 tsp salt, 2 tbsp mustard seeds, 4 cloves, 2 tsp black pepper and 2 tsp peppercorns into the mixing bowl and cook for 10 min./100°C/speed 2.

Pour over radishes

Carefully pour the boiling liquid into the jars so that the radishes are completely covered. Close the jars tightly immediately.

Let steep

Let the filled jars steep in a cool, dark place for at least 24 hours (better longer) so that the aromas can fully develop.
