Description

This lamb stew with sweet potato and vegetables is a comforting dish, perfect for cold winter days. The lamb meat, tender and juicy, combines perfectly with the sweetness of the sweet potato and the aromatic touch of the spices. I have been preparing it for years and it is always a success at home. It is ideal for a family meal or a special dinner. Also, it can be prepared in advance and reheated, which makes it a very practical option. A dish full of flavor and tradition!

Ingredients (13 ingredients)

  • 0.5 piece chopped lamb spare rib
  • 1 piece onion
  • 1 piece red bell pepper
  • 1 clove garlic
  • 1 l vegetable broth
  • 1 kg sweet potato
  • 1 piece carrot
  • 1 cup tomato sauce
  • to taste salt
  • to taste pepper
  • 1 cdita cumin
  • to taste oil
  • 1 cup cooked peas

Preparation (9 steps)

Prepare the lamb

Make sure that the amount of 1/2 chopped lamb spare rib is enough to cover the bottom of the cooking container.

Sauté garlic and lamb

In a separate frying pan, heat a little oil. When hot, add 1 minced garlic clove and the 1/2 chopped lamb spare rib seasoned with salt and pepper. Brown the meat on all sides.

Chop onion and pepper

Thermomix® Setting

Insert 1 quartered onion and 1 chopped red bell pepper into the Thermomix glass. Chop for 3 sec./Stufe 5.

Sauté vegetables

Add the chopped vegetables to the lamb in the frying pan and sauté until soft.

Cook with broth

60 min/212°F/Speed 1 100

Pour 1 Lt vegetable broth into the pan, covering the meat and vegetables. Cook over low heat for 60 Min./100°C/Stufe 1.

Add sauce and spices

5 min/212°F/Speed 1 100

Add 1 cup tomato sauce, salt, pepper and 1 tsp cumin to the pan. Heat for 5 Min./100°C/Stufe 1.

Incorporate sweet potato and carrot

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 1 kg chopped sweet potato and 1 chopped carrot to the pan. Cook for 20 Min./100°C/Stufe 1 or until the sweet potato is cooked.

2 min/212°F/Speed 1 100

Incorporate 1 cup cooked peas to the pan. Heat for 2 Min./100°C/Stufe 1.
