Description

This chicken and chorizo ragu is a flavorful and hearty dish, perfect for a comforting meal. The combination of spicy chorizo, tender chicken thighs, and sun-dried tomatoes creates a rich and satisfying sauce. I've been making this recipe for years, and it's always a hit! It's especially delicious served over jacket potatoes, but you can also enjoy it with pasta or rice. The ragu is easy to prepare and simmers to perfection, making it ideal for a weeknight dinner. Feel free to add a dollop of sour cream or a sprinkle of fresh parsley for an extra touch of flavor.

Ingredients (10 ingredients)

  • 120 g cooking chorizo
  • 1 piece red onion
  • 2 clove garlic cloves
  • 1 tsp hot smoked paprika
  • 80 g sundried tomatoes
  • 600 g skinless and boneless chicken thighs
  • 400 g chopped tomatoes
  • 100 ml chicken stock
  • 1 piece lemon
  • jacket potatoes

Preparation (6 steps)

Chorizo Sauté

Cut the cooking chorizo into small pieces. Add the chorizo to a pan and fry over medium heat for 5 minutes, or until it releases its oil and starts to char at the edges. Remove the chorizo from the pan and set aside.

Onion and Garlic Preparation

Peel and quarter the red onion. Peel the garlic cloves. Add the red onion to the mixing bowl and chop for 3 Sec./Stufe 5. Add the garlic cloves and chop for 3 Sec./Stufe 7.

Add the sautéed chorizo, hot smoked paprika, and sundried tomatoes to the mixing bowl. Sauté for 3 Min./120°C/Stufe 1.

Chicken Thighs Preparation

Add the skinless and boneless chicken thighs to the mixing bowl. Cook for 2 Min./120°C/Stufe 1. Turn the chicken thighs and cook for another 2 Min./120°C/Stufe 1.

40 min/212°F/Speed 1 100

Pour in the chopped tomatoes and chicken stock. Cook for 40 Min./100°C/Stufe 1.

Stir in the lemon juice for 10 Sec./Stufe 1/Linkslauf.
