Description

This bean and sweet potato stew is a hearty and warming main course, ideal for autumn/fall. With sweet potatoes, beans, tomatoes, and lentils, it is rich in fiber and nutrients. Preparation in the Thermomix® takes about 2 hours, including simmering time. Perfect for vegans and vegetarians.

Ingredients (19 ingredients)

  • 1 Stück red onion
  • 1 Stück red bell pepper
  • 2 Stück cloves garlic
  • 500 g sweet potatoes
  • 650 g cooked mixed beans (canned)
  • 400 g diced tomatoes
  • 100 g red lentils raw
  • 1 l vegetable broth
  • 3 EL olive oil
  • nach Geschmack salt
  • nach Geschmack pepper
  • 1 TL cumin
  • 1 TL ground coriander
  • 0.5 TL ground cinnamon
  • 1 TL sweet paprika powder
  • chili flakes
  • 25 g chopped dark chocolate (optional)
  • yogurt or Skyr (for serving)
  • fresh herbs (for garnish)

Preparation (7 steps)

Prepare the vegetables

Dice 1 red onion and 1 red bell pepper with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the desired disc (fine/coarse). The chopped ingredients can be collected directly in the mixing bowl or separately. Peel 2 cloves of garlic.

Chop garlic

Place 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7.

Sauté onions and peppers

Add 3 tbsp olive oil, the diced onion and bell pepper to the mixing bowl and sauté for 3 min./120°C/speed 1.

Season

Add salt, pepper, 1 tsp cumin, 1 tsp ground coriander, 1/2 tsp ground cinnamon, 1 tsp sweet paprika powder and chili flakes to taste to the mixing bowl and briefly sauté.

Simmer the stew

Thermomix® Setting
1,5 Std./212°F/Speed 1 212°F

Add 500g peeled and diced sweet potatoes, 650g cooked mixed beans (drained weight), 400g diced tomatoes, 100g red lentils raw, washed, and 1 l vegetable broth to the mixing bowl and simmer for 1.5 hrs/100°C/speed 1 until the lentils are soft. Stir occasionally with the spatula.

Optional: Stir in chocolate

After the cooking time, optionally stir in 25g chopped dark chocolate.

Serve

Serve the stew with yogurt or Skyr and garnish with fresh herbs.
