Description

This hearty fish stew is an absolute highlight for special occasions! The combination of different types of fish, shrimp and fresh vegetables in an aromatic broth is simply irresistible. I serve it with homemade aioli, which gives the dish a special touch. I like to make this fish stew in autumn or winter, when you need something warming and hearty. The preparation takes a little time, but it's definitely worth it! A great dish to spoil family and friends.

Ingredients (16 ingredients)

  • 4 clove Garlic
  • 1 piece Chili pepper
  • Salt
  • 2 piece Egg yolks (size M)
  • 1 tbsp Lemon juice
  • 200 ml Olive oil
  • 5 tbsp Olive oil
  • 2 piece Beef tomatoes (à 300 g)
  • 1 Stange Leek medium-sized
  • 1 piece Bell pepper
  • 1 piece Onion medium-sized
  • 0.5 bunch Thyme
  • 300 g Potatoes predominantly waxy (e.g. Christa)
  • 500 g Fish fillets (e.g. hake, sea bream and dentex)
  • 300 g Shrimp
  • Black pepper

Preparation (10 steps)

Chop garlic and chili pepper

Put 4 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Clean 1 chili pepper, halve, remove seeds, cut into small pieces and add to the mixing bowl together with the garlic. Chop with a little salt for 5 sec./speed 5.

Prepare aioli

Thermomix® Setting
10 sec/Speed 3

Put 2 egg yolks, the garlic-chili mixture and 1 tbsp lemon juice in the mixing bowl and stir for 10 sec./speed 3. Then slowly stir in 200 ml olive oil, first drop by drop, then in a thin stream, with the blade running (speed 3) until a creamy aioli is formed. Season with salt.

Prepare tomatoes

Lightly score 2 beef tomatoes, pour boiling water over them, quench with cold water after approx. 2 minutes and peel off the skin. Quarter the tomatoes, remove the seeds and chop the flesh into small pieces.

Prepare vegetables

Clean, wash and cut 1 stalk of leek into rings. Clean, wash and chop 1 bell pepper each. Peel and quarter 1 onion. Wash ½ bunch of thyme, pat dry, set aside a little for garnish, chop the rest finely. Wash, peel and dice 300 g potatoes.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Put the onion in the mixing bowl and chop for 3 sec./speed 5. Add 5 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Cook vegetables

Thermomix® Setting
30 min/212°F/Speed 1 100

Add tomatoes and thyme and sauté for 1 min./100°C/speed 1. Add the remaining prepared vegetables (leek, bell pepper, potatoes) and pour in 1 liter of water. Simmer for 30 min./100°C/speed 1.

Prepare fish and shrimp

Wash and pat dry 500 g fish fillets and 300 g shrimp. Cut the fillets into pieces.

Fry fish and shrimp

Heat 3 tablespoons of oil in a large pan, fry the fish and shrimp in portions for 2-3 minutes. Turn once. Season with salt and pepper, remove and set aside.

Season soup

10 sec/Speed 3

Season the soup in the mixing bowl with salt and pepper. Stir for 10 sec./speed 3.

Arrange fish stew

Layer the fish fillets and shrimp with the soup in an earthenware pot or terrine. Garnish with thyme. Serve with aioli. Bread tastes good with it.
