Description

This Indian pumpkin stew is a warming and spicy dish, ideal for autumn/fall. With chicken breast, pumpkin, corn, and red beans, it's rich in protein and fiber. Preparation in the Thermomix® takes about 55 minutes and yields a filling main course.

Ingredients (15 ingredients)

  • 1 Stück large onion
  • 30 dag chicken breast
  • 50 dag pumpkin (not floury)
  • 1 Dose corn
  • 1 Dose red beans
  • 1 Dose peeled tomatoes
  • 1 Dose coconut milk
  • nach Geschmack salt
  • nach Geschmack pepper
  • 3 Stück garlic cloves
  • 1 TL cilantro
  • 1 TL cumin
  • 1 TL red chili paste
  • 1 Stück hot chili pepper
  • nach Geschmack oil

Preparation (5 steps)

Chop the onion

Place 1 large onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté the onion

Add oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Fry the chicken

Cut 30 dag chicken breast into strips and fry in a separate pan.

Prepare the stew

Add the fried chicken, 1 can of corn, 1 can of red beans, 1 can of peeled tomatoes, 1 can of coconut milk, salt, pepper, 3 garlic cloves, 1 tsp coriander, 1 tsp cumin, 1 tsp red chili paste and 1 hot chili pepper to the mixing bowl and simmer for 30 min./100°C/speed 1 reverse.

Add pumpkin

Cut 50 dag peeled pumpkin into cubes, add to the mixing bowl and cook for 5 min./100°C/speed 1 reverse until the pumpkin is al dente.
