Description

Diamond biscuits are a nutty finger food dessert from the Thermomix® with wheat flour, hazelnuts, butter and redcurrant jam. The biscuit recipe is particularly suitable for the festive season and for baking with the family. The preparation time is 135 minutes, of which 45 minutes is active working time. This recipe makes a large portion of biscuits.

Ingredients (6 ingredients)

  • 130 g Wheat flour 700
  • 50 g Ground hazelnuts
  • 100 g Butter
  • 80 g Sugar
  • 1 Stück Egg
  • Redcurrant jam

Preparation (5 steps)

Add ingredients for the shortcrust pastry to the mixing bowl

Put 130 g wheat flour 700, 50 g ground hazelnuts, 100 g butter, 80 g sugar and 1 egg into the mixing bowl.

Prepare shortcrust pastry

Process all ingredients for 2 min./kneading stage to a shortcrust pastry.

Chill the dough

Wrap the shortcrust pastry in cling film and let it rest in the refrigerator for 1 hour.

Cut out and bake biscuits

Roll out the dough on a floured work surface and cut out diamond biscuits (base and lid). Bake in a preheated oven at 170 degrees hot air for about 10 minutes.

Decorate biscuits

Spread the cooled biscuit bases with redcurrant jam and place the lids on top. Finally, sprinkle with icing sugar.
