  • 1 cup rice flour
  • 0.75 cup soy flour
  • 0.25 cup tapioca starch
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.75 tsp ground nutmeg
  • 0.5 tsp ground ginger
  • 0.5 cup dairy-free margarine, softened
  • 2 cups packed brown sugar
  • 3 piece eggs, beaten
  • 1 can pumpkin puree (15 ounce)
  • 2 tsp vanilla extract

Preparation (6 steps)

Preheat oven and prepare baking dish

Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish. This step is done outside of the Thermomix.

Combine dry ingredients

Add 1 cup rice flour, ¾ cup soy flour, ¼ cup tapioca starch, 2 tsp ground cinnamon, 1 tsp baking soda, 1 tsp baking powder, ¾ tsp ground nutmeg, and ½ tsp ground ginger to the Thermomix bowl. Mix for 10 Sec./Stufe 4 to combine.

Cream margarine and sugar

Thermomix® Setting
30 sec/Speed 3

Add ½ cup softened dairy-free margarine and 2 cups packed brown sugar to the Thermomix bowl. Mix for 30 Sec./Stufe 3 until creamy and lightened in color. Use the spatula to scrape down the sides of the bowl if needed.

Add eggs, pumpkin, and vanilla

20 sec/Speed 3

Add 3 beaten eggs, one at a time, to the Thermomix bowl, mixing for 10 Sec./Stufe 3 after each addition. Then add 1 (15 ounce) can pumpkin puree and 2 tsp vanilla extract. Mix for 20 Sec./Stufe 3 until well combined.

Combine wet and dry ingredients

Gradually add the dry mixture from step 2 to the wet mixture in the Thermomix bowl. Mix for 30 Sec./Stufe 3, or until just combined. Be careful not to overmix. Use the spatula to scrape down the sides of the bowl if needed.

Pour into baking dish and bake

Pour the batter into the prepared 13x9-inch baking dish. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean. This step is done outside of the Thermomix.
