Description

This Greek yoghurt and cucumber sauce, also known as Tzatziki, is a refreshing and delicious accompaniment, perfect for hot summer days. The recipe is very simple and quick to prepare with the Thermomix®. The secret is to let the cucumber release the excess water so that the sauce has the perfect consistency. I serve it with pita bread, raw vegetables or as a sauce for grilled meats. It is a guaranteed success at any informal lunch or dinner! It is also a vegetarian and gluten-free option, ideal for all tastes. Try it and you will see how easy it is to enjoy an authentic and homemade flavour.

Ingredients (6 ingredients)

  • 20 g Extra virgin olive oil
  • 2 piece Medium cucumbers
  • to taste Coarse salt
  • 600 g Greek yoghurt
  • 15 g Vinegar
  • 4 clove Garlic cloves

Preparation (5 steps)

Grate the cucumbers

Wash and remove the ends from the 2 medium cucumbers. Place them in the Thermomix glass and grate them for 2 seconds at speed 5, making sure they don't turn into puree.

Drain the cucumbers

Pour the grated cucumbers into the Varoma container. Sprinkle with coarse salt and let stand for 2 hours, placing a bowl under the Varoma container to collect the water released by the cucumbers. You can squeeze from time to time with a spoon to speed up the process.

Chop the garlic

Put the 4 peeled garlic cloves in the Thermomix glass and chop them for 3 seconds at speed 5.

Mix the ingredients

20 sec/keine/Speed 1

Add the drained cucumbers, 600 g of Greek yoghurt, 15 g of vinegar and 20 g of extra virgin olive oil to the glass. Program 20 seconds at speed 1. If it doesn't mix well, finish mixing with the spatula.

Chill and serve

Pour the sauce into a bowl and chill in the fridge before serving.
