Description

This yogurt-cucumber drink is an absolute hit on hot days! I love making it because it's so quick and totally refreshing. The yogurt makes it creamy, the cucumber provides a light freshness, and the mint gives it that special kick. Perfect as a light snack in between meals or as a refreshing drink for barbecues. If you like, you can add a splash of lemon. A great, vegetarian drink that simply puts you in a good mood!

Ingredients (5 ingredients)

  • 500 g Natural yogurt
  • 4 Tasse/n Water
  • 0.5 tsp Salt
  • 0.5 Gurke/n Cucumber
  • 1 Handvoll Mint fresh, chopped, or 1 bag of peppermint tea

Prepare yogurt mixture

Add 500 g natural yogurt, 0.5 tsp salt and 3 cups of water to the mixing bowl and mix for 20 sec/speed 3.

Add 0.5 cucumber peeled and cut into fine cubes, as well as 1 handful of chopped mint (or the contents of a peppermint tea bag) to the mixing bowl and stir in for 10 sec/reverse speed 2.

This yogurt-cucumber drink is more than just a recipe for me; it's a memory of summer vacations in Greece. I tried a similar version there for the first time, and since then, it has been a staple in my summer kitchen. The simplicity and refreshing effect immediately convinced me. Over the years, I have adapted and refined the recipe again and again until it was the way I like it best. The natural yogurt forms the creamy base of the drink. Make sure to choose a yogurt with a high fat content, as this ensures a particularly velvety texture. The fat content also helps the flavors to develop better. The salt is not only important for the taste, but it also helps to balance the acidity of the yogurt. The cucumber brings the freshness to the drink. I prefer salad cucumbers, as they have fewer seeds and a milder taste. Peel the cucumber to avoid bitter substances and cut it into fine cubes so that it mixes well with the other ingredients. The mint is the icing on the cake. It gives the drink an aromatic note and provides an extra boost of freshness. Fresh mint is of course ideal, but if you don't have any on hand, you can also use peppermint tea. Make sure you only use the contents of the tea bag, as the tea bags themselves can distort the taste. The preparation in the Thermomix® is very simple. First, mix the yogurt with the salt and the water. Here it is important to keep an eye on the consistency. Start with three cups of water and add another one if needed until the drink reaches the desired creaminess. The Thermomix® ensures even mixing without lumps forming. When you add the cucumber and mint, be sure to use the reverse. This means that the ingredients are only lightly stirred in and not crushed. This is important so that the drink does not become too bitter. For a vegan version, you can replace the natural yogurt with a plant-based alternative based on soy or cashew. Make sure that the plant-based yogurt is unsweetened so that the drink does not become too sweet. Instead of mint, you can also use other herbs such as dill or coriander. A splash of lime juice provides additional acidity and freshness. If you like it a little spicier, you can add a pinch of cayenne pepper. The yogurt-cucumber drink is a perfect accompaniment to grilled food or as a refreshing snack in between meals. Serve it well chilled in tall glasses with ice cubes. You can also garnish it with a cucumber slice and a mint sprig. Flatbread or olives go well with it. The drink will keep in the refrigerator for about a day. It is best to prepare it shortly before serving, as the cucumber will otherwise lose its flavor. However, you can also prepare the yogurt mixture beforehand and keep it in the refrigerator. Add the cucumber and mint just before serving. This keeps the drink fresh and aromatic.
