Description
Delicious rhubarb cake with a fluffy meringue topping.
Ingredients (7 ingredients)

4 EL Sugar

2 Päckchen Vanilla sugar

2 EL Oil
-
75 ml Milk
-
0.25 Päckchen Baking powder

1 Stück Rhubarb (amount as needed)
Preparation (4 steps)
Prepare dough
Put 4 eggs and 2 tablespoons of sugar in the mixing bowl. Beat until fluffy for 3 min./speed 3.5/butterfly. Add 2 tablespoons of oil, 75 ml of milk and 1 packet of vanilla sugar and mix for 15 sec./speed 3. Add 1/4 packet of baking powder and 2 tablespoons of sugar and mix for 10 sec./speed 3.
Bake dough
Pour the dough into a greased springform pan (24x24 cm) and bake in a preheated oven at 180°C for approx. 12 minutes.
Prepare foam
Insert butterfly. Put 4 egg whites, 3 tablespoons of sugar and 1 packet of vanilla sugar in the mixing bowl. Beat for 3 min./speed 3.5/butterfly until stiff.
Put rhubarb and foam on the cake
Place rhubarb on the pre-baked cake. Spread the meringue on top and bake for another 10 minutes.
