Description

This beef with creamy chestnuts is a comforting dish, perfect for autumn evenings or end-of-year celebrations. I often prepare it when the temperatures drop, and it always wins everyone over. The beef, melting and flavorful, goes perfectly with the sweetness of the chestnuts and the richness of the cream. A simple dish to make with the Thermomix®, which simmers gently to develop all its flavors. Feel free to accompany it with mashed potatoes or rice for a complete and gourmet meal. A real delight!

Ingredients (11 ingredients)

  • to taste Nutmeg
  • 1 cube Broth
  • Half-salted butter
  • Flour
  • Clove
  • 12 g Mustard
  • 500 g Canned chestnuts
  • 1 piece Onion
  • 25 cl Red wine
  • 12.5 cl Liquid cream
  • 750 g Beef for beef bourguignon

Preparation of the onion

Cut the onion in half and put it in the Thermomix bowl. Chop for 3 Sek./Stufe 5.

Cooking the onion and preparing the meat

Add a good knob of half-salted butter to the bowl. Cook for 3 Min./120°C/Stufe 1. Meanwhile, cut the beef into large cubes, flour them and coat them with mustard.

Simmering the beef

60 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the floured and mustard beef to the bowl, then cover with red wine. Add a few cloves, a little grated nutmeg and the broth cube. Simmer for 60 Min./100°C/Stufe 1/Linkslauf.

Adding the cream and chestnuts

Thermomix® Setting
15 min/194°F/Speed 1/Linkslauf 90 Reverse

Add the liquid cream and the drained and rinsed canned chestnuts to the bowl. Simmer for another 15 Min./90°C/Stufe 1/Linkslauf.
