Description

This watermelon salad with feta and mint is an absolute highlight for hot summer days! The combination of sweet watermelon, salty feta and fresh mint is simply unbeatable. I like to make it again and again because it is so quick to prepare and is very well received by my guests. The dressing with lime and orange gives the salad a fruity note. The roasted pine nuts provide an extra crunch. A great dish for barbecue parties or as a light meal in between. Vegetarian and gluten-free to boot!

Ingredients (11 ingredients)

  • 1000 g Watermelon pulp, seedless or almost seedless
  • 200 g Feta
  • 3 Stängel Fresh mint
  • 0.5 piece Lime, freshly squeezed
  • 0.5 piece Orange, freshly squeezed
  • 50 g Pine nuts
  • 1 tbsp Lime peel zest
  • 2 tbsp Olive oil
  • 1 tbsp Honey
  • 1 Msp. Chili flakes
  • to taste Salt

Preparation (8 steps)

Prepare watermelon

Cut 1 kg of watermelon pulp (seedless or almost seedless) into approx. 1.5 cm cubes and place in a bowl.

Prepare dressing

Squeeze out 1/2 orange and 1/2 lime. Put the juices in the mixing bowl. Add 2 tbsp olive oil, 1 tbsp honey, 1 pinch of chili flakes and some salt.

Mix dressing

Mix the dressing for 10 sec/level 3.

Marinate watermelon

Pour the dressing over the watermelon pieces and mix carefully. Let the melon marinate for about 10 minutes.

Roast pine nuts

Thermomix® Setting
3 min/248°F/Speed 1 120

Roast 50 g of pine nuts in a pan without fat until golden brown. Alternatively, put the pine nuts in the mixing bowl and roast for 3 min./120°C/level 1.

Prepare feta, mint and lime zest

Crumble 200 g feta. Wash 3-4 sprigs of fresh mint, pluck the leaves and chop finely. Grate 1 tbsp lime zest.

Mix salad

Carefully mix the marinated watermelon pieces with the crumbled feta, chopped mint, lime zest and roasted pine nuts.

Serve salad

Arrange the salad in a bowl or on plates and serve.
