Description

These stuffed tomatoes are a real eye-catcher and taste simply fantastic! I especially like to make them in the summer when the tomatoes are nice and juicy and aromatic. The filling of ground meat, bread and pumpkin seeds is hearty and savory, and the roasted garlic baguette goes perfectly with it. A great dish for a relaxed lunch or a cozy dinner with friends. The recipe is easy to prepare and can be prepared well in advance. Try it, you will be thrilled!

Ingredients (13 ingredients)

  • 4 piece large Tomatoes
  • 100 g Bread from the day before
  • 40 g Pumpkin seeds
  • 2 tbsp Olive oil
  • 1 piece Onion
  • 300 g Mixed ground meat
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Thyme leaves
  • 1 piece Baguette
  • 4 clove Garlic
  • 0.5 Bd. Chives
  • 125 g Butter

Preparation (10 steps)

Roast bread and pumpkin seeds

Cut the bread from the day before into cubes. Roast the pumpkin seeds with the bread cubes and 1 tbsp olive oil in a pan until golden brown and set aside.

Prepare tomatoes

Wash the tomatoes, cut off the lid and scoop out the pulp with a spoon. Cut the pulp into cubes and set aside.

Chop onion

Thermomix® Setting

Peel, quarter and place the onion in the mixing bowl. Chop 3 sec./level 5.

Fry ground meat

Fry the ground meat with the chopped onion and 1 tbsp olive oil in a pan until crumbly. Season with salt and pepper.

Mix filling

Mix the diced tomato pulp with the roasted pumpkin seeds, bread cubes, fried ground meat and 1 tbsp thyme leaves in a bowl.

Fill tomatoes

Fill the ground meat mixture into the hollowed-out tomatoes and put the lid on.

Chop garlic

Thermomix® Setting

Peel the garlic and place in the mixing bowl. Chop 3 sec./level 7.

Prepare herb butter

Cut the chives into small rolls. Knead the chopped garlic cloves, chives, butter, salt and pepper in a bowl.

Prepare baguette

Cut the baguette crosswise, but not all the way through. Fill the herb butter into the incisions.

Bake

Preheat the oven to 185°C circulating air. Place the stuffed tomatoes and garlic baguette on a baking sheet and bake for approx. 20 minutes. Bake the garlic baguette for the last 10-12 minutes.
