Description

Preparing rice for sushi at home is easier than you think! This method, which I have been using for years, guarantees a perfect result, with grains cooked just right and a delicate flavor. The secret lies in carefully washing the rice and the ratio between rice and water. Ideal for those who love homemade sushi and want a quality base ingredient. Perfect for nigiri, maki and temaki, this rice is the ideal base for an authentic and tasty sushi experience. Preparation requires a bit of patience, but the end result is well worth it.

Ingredients (3 ingredients)

  • Sushi rice
  • Water
  • Sushi vinegar

Preparation (5 steps)

Rice Washing

Put the rice in a bowl and cover it completely with cold water. Change the water two or three times, then pour it into the basket and pass it under running water until the water, coming out of the holes, is perfectly clear.

Rice Cooking

Thermomix® Setting

Pour the rice into the bowl, add the water, mix gently with the spatula, close the bowl and cook for 12 minutes at 100°C in reverse direction at speed 1.

Preparation of the Vinegar Sauce

In a saucepan, pour the vinegar, a pinch of salt and the sugar. Bring to a boil on the stove and turn off the heat. (This step is not performed in the Thermomix).

Rice Dressing

Pour the rice into the hangiri previously moistened with cold water under the tap, add the previously prepared vinegar and sugar syrup, and finally gently mix the rice with a wooden spoon. (This step is not performed in the Thermomix).

Rice Resting

Cover with a damp and wrung out cloth, or if you have the ohitsu, transfer it there. At this point the rice is ready to be used in your sushi recipes. (This step is not performed in the Thermomix).
