Description

This tricolor rice with vegetables is a simple and nutritious recipe, perfect for a complete meal or as a side dish. The combination of rice, carrot, peas and potato creates a colorful and flavorful dish. I prepare it often because it is an easy way to include more vegetables in the diet. In addition, it can be easily adapted to a vegan version by substituting chicken broth for vegetable broth. It is a dish that always succeeds at home, both for lunch and for dinner! The preparation is quick and the result is a loose and delicious rice.

Ingredients (10 ingredients)

  • 1 cup Rice
  • 2 tazas Vegetable or chicken broth
  • 2 tsp Chicken or vegetable broth powder
  • 1 piece Carrot (diced)
  • 1 cup Peas
  • 2 unidades Potato (diced)
  • 2 unidades Tomato
  • 1 trozo Onion
  • 1 clove Garlic
  • 1 pinch Salt

Preparation (6 steps)

Soak the rice

Place 1 cup of rice in a bowl with boiling water and let it soak for 10 minutes. Then, drain the rice and set aside.

Chop vegetables

Cut 1 unit of carrot and 2 units of potato into small squares. Reserve 1 cup of peas.

Crush tomato, onion and garlic

Place 2 units of tomato, 1 piece of onion and 1 clove of garlic in the Thermomix glass. Add a little water and crush 10 sec./Stufe 5.

Sauté the rice and vegetables

Add oil to the Thermomix glass. Incorporate the drained rice, carrot, peas and potatoes. Sauté 5 Min./120°C/Giro a la izquierda/velocidad cuchara.

Add the tomato sauce

5 min/212°F/Giro a la izquierda/velocidad cuchara 100 Reverse

Pour the mixture of tomato, onion and crushed garlic into the Thermomix glass. Add 2 tsp of vegetable or chicken broth powder and 1 pinch of salt. Cook 5 Min./100°C/Giro a la izquierda/velocidad cuchara.

Cook the rice

Thermomix® Setting
20 min/212°F/Giro a la izquierda/velocidad cuchara 100 Reverse

Add 2 cups of vegetable or chicken broth to the Thermomix glass. Cover the Thermomix and program 20 Min./100°C/Giro a la izquierda/velocidad cuchara. Verify that the rice is cooked and the broth has been consumed.
