Description

This roast chicken in two stages is a most juicy delight that will surprise you. First, we cook the chicken in broth to make it tender and full of flavor. Then, we bake it with potatoes and cherry tomatoes to give it a golden and crispy touch. It is a perfect dish for a family meal or a special dinner. The combination of cooking in broth and baking makes the meat incredibly soft and flavorful. A comforting and easy to prepare dish with your Thermomix®! Ideal for cold winter days and perfect for sharing at Christmas. Also, you can vary the vegetables according to the season.

Ingredients (6 ingredients)

  • 1 piece Small whole chicken, approximately 1 kilo
  • 2 l Chicken or vegetable broth or water
  • 3 piece Potato
  • 50 ml Extra virgin olive oil
  • 1 piece Lemon juice
  • 8 piece Cherry tomato

Preparation (6 steps)

Heat the broth

Thermomix® Setting
15 min/212°F/Speed 1 100

Pour the chicken or vegetable broth into the Thermomix bowl. Heat the broth for 15 Min./100°C/Stufe 1.

Cook the chicken in the broth

Thermomix® Setting
30 min/212°F/Speed 1 100 Reverse

Add the whole, cleaned chicken to the bowl with the hot broth. Make sure the chicken is completely submerged. Cook the chicken for 30 Min./100°C/Stufe 1/Linkslauf. Tie the chicken legs with a rubber band or kitchen twine to prevent it from falling apart.

Preheat the oven

While the chicken is cooking, preheat the oven to 190ºC with heat from above and below.

Prepare the dish

Prepare a baking dish and add the olive oil. Distribute the oil evenly over the entire surface of the dish.

Add potatoes and tomatoes

Place the cooked chicken in the baking dish. Surround the chicken with the potatoes in pieces and the cherry tomatoes. Add salt and pepper over the surface of the meat, as well as the lemon juice.

Bake the chicken

Bake the chicken for 30 minutes at 190ºC until golden brown and the potatoes are tender.
