Description

This roasted chicken with herbs and vegetables is a comforting and flavorful dish, perfect for a family meal or a special occasion. I love preparing this dish because it is relatively simple to make and the result is always delicious. The chicken is flavored with fresh herbs and cooked with seasonal vegetables, which gives it an incomparable flavor. Preparation takes about 30 minutes, but baking in the oven takes a little longer, about 1 hour 30 minutes. This dish is ideal for lovers of meat and authentic flavors. Ingredients (11 ingredients)

  • 1.8 kg farm chicken
  • fresh parsley
  • 2 piece onions
  • 1 carotte carrot
  • 100 g butter
  • 10 clove garlic
  • olive oil
  • salt
  • Espelette pepper
  • 1 feuille thyme
  • 1 branche bay leaf

Preparation of herb butter

Thermomix® Setting

100 g softened butter in the bowl. Add the chopped fresh parsley, a pinch of Espelette pepper and salt. Mix 20 Sec./Stufe 3. Scrape the sides of the bowl with the spatula.

Chicken preparation

Gently lift the skin of the chicken around the neck and spread the herb butter on the breasts. Add the rest of the parsley, thyme leaf and bay leaf inside the chicken. Add a large pinch of salt and Espelette pepper inside the chicken. Salt the poultry on all sides and rub well.

Vegetable preparation

Peel and slice 2 onions. Peel and slice 1 carrot. Peel 10 cloves of garlic.

Roasting the chicken in the oven

Place the poultry thigh side down in a gratin dish. Add the sliced carrots and sliced onions to the dish. Add the garlic cloves around the poultry and drizzle with a nice stream of olive oil. Cook at 140°C for 15 minutes on the first thigh, 15 minutes on the second and 1 hour to 1 hour 30 minutes on the belly.

Juice preparation

Remove the poultry from the dish. Add a little water to the dish and heat 5 Min./100°C/Stufe 2 to obtain juice.
