Description

This aromatic spice-crusted roast beef is a showstopper for any special occasion! I've been making this recipe for years, and it always impresses. The combination of juniper berries, coriander seeds, peppercorns, and allspice creates a wonderfully fragrant crust that infuses the beef with incredible flavor. The meat stays juicy and tender, making it a truly memorable dish. Perfect for a Christmas dinner or a celebratory birthday feast. The best part? Ingredients (7 ingredients)

  • 1 tbsp juniper berries
  • 1 tbsp coriander seeds
  • 1 tbsp black peppercorns
  • 1 tbsp allspice
  • 2 tbsp olive oil
  • 2 kg topside joint of beef
  • 3 kg topside joint of beef

Spice Blend Preparation

Thermomix® Setting
20 sec/Speed 10

Add 1 tbsp juniper berries, 1 tbsp coriander seeds, 1 tbsp black peppercorns, 1 tbsp allspice, and ½ tbsp salt to the Thermomix bowl. Grind for 20 Sec./Stufe 10. Ensure the spices are coarsely ground.

Marinating the Beef

Rub 2 tbsp olive oil all over the 2kg-3kg topside joint of beef. Then, generously rub the ground spice mixture all over the beef, massaging it in well. Cover the beef and chill overnight in the refrigerator to marinate.

Roasting the Beef

Preheat oven to 190C/170C fan/gas 5. Weigh the marinated beef joint. Roast for 10 mins per 450g for rare meat and 15 mins per 450g for medium, plus an extra 20 mins. Cover and rest for 20 mins before slicing and serving.
