Description

This braised pork roast in onion sauce is a hearty main course, ideal for festive occasions. The pork roast is first seared and then braised in the oven until tender and juicy. The onion sauce is prepared in the Thermomix® and gives the dish a special touch. The recipe is lactose-free and designed for 6 servings.

Ingredients (8 ingredients)

  • 3 Stück Onions
  • 1.5 kg Pork roast from the back or neck
  • 2 EL Clarified butter
  • 2 EL Dijon mustard
  • 400 ml Roasting stock
  • Salt
  • Pepper
  • 2 EL Cornstarch

Preparation (9 steps)

Prepare onions

Thermomix® Setting

Peel and halve 3 onions. Place the halved onions in the mixing bowl and chop for 3 sec/speed 5. Use the spatula to scrape down the sides.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp clarified butter to the chopped onions in the mixing bowl and sauté for 3 min/120°C/speed 1.

Sear meat (NOT in the Thermomix)

Season 1.5 kg pork roast from the back or neck with salt and pepper. Heat 2 tbsp clarified butter in a roaster or large pan and sear the pork roast on all sides for about 10 minutes until nicely browned. Then remove and spread with 2 tbsp Dijon mustard.

Combine meat and onions

Place the sautéed onions from the mixing bowl into the roaster. Place the seared and mustard-coated pork roast on top of the onions.

Braising in the oven

Pour 400 ml roasting stock over the pork roast. Place the roaster with the lid closed in the preheated oven at 150 degrees circulating air and braise for 60 - 90 minutes. (About 1 hour per kilo of meat).

Resting time

Remove the roaster from the oven and let the pork roast rest for another 15 minutes with the lid closed. Then remove the roast from the roaster and keep warm.

Purée sauce

30 sec/Speed 8

Place the sauce and onions from the roaster into the mixing bowl and purée for 30 sec/speed 8. If necessary, use the spatula to assist.

Season and thicken sauce

Thermomix® Setting
3 min/212°F/Speed 2 100

Season the puréed sauce with salt and pepper. If desired, stir 2 tbsp cornstarch with some cold water until smooth and add to the mixing bowl. Then cook for 3 min/100°C/speed 2 to thicken the sauce.

Serve

Slice the pork roast and serve with the sauce.
