Description

Preparation (10 steps)

Prepare flour

Sift 230 g flour into a large bowl and press a hollow in the middle.

Heat milk and activate yeast

Heat 150 ml of milk lukewarm in the Thermomix. Crumble 20 g of yeast into the hollow and mix with the milk, 1 pinch of sugar and some flour from the edge until it has dissolved. Cover the pre-dough and let it rest in a warm place for about 20 minutes until it has visibly risen.

Prepare dough

Add the remaining sugar (45 g), the clarified butter (65 g) and the salt (1/2 tsp) to the pre-dough. Insert the Patix dough knife and process everything for 2 min./kneading level into a dough. Cover and let rest in a warm place for about 20 minutes.

Prepare sultanas

For the filling, wash the sultanas (50 g) with hot water and pat dry with kitchen paper.

Melt clarified butter

Melt 50 g clarified butter for the filling in the Thermomix.

Prepare filling

In a bowl, carefully mix the marzipan raw material (50 g), the ground hazelnuts (100 g), the breadcrumbs (50 g), the flour (3 tbsp), the egg (1), the semolina (2 tbsp), the sugar (150 g) and the candied lemon peel (2 tbsp) with half a cup of water. Incorporate the melted clarified butter.

Prepare oven

Grease the loaf pan. Preheat the oven to 180°C.

Roll out and fill dough

Roll out the yeast dough on the floured work surface to a square of about 25 x 25 cm. Spread with the nut filling. Sprinkle the sultanas over it.

Shape and bake roll

Roll up the dough sheet evenly from the right and left sides towards the middle. Place the roll in the mold. Bake in the oven (middle, convection 160°) for about 50 minutes. Let the nut roll cool in the mold.

Decorate

Turn the cooled nut roll onto a plate. Melt the butter (50 g) over mild heat and brush the nut roll with it. Sprinkle with the sugar (80 g), sift the powdered sugar (50 g) over it.
