Description

This sponge roll with mandarin quark is a fruity dessert that is easily prepared with the Thermomix®. The main ingredients are eggs, sugar, flour, cream and mandarins. The preparation time is about 60 minutes for 10 servings. Ideal as a winter dessert or for coffee visits.

Ingredients (13 ingredients)

  • 5 Stück Eggs
  • 1 Prise Salt
  • 100 g Sugar
  • 75 g Wheat flour
  • 30 g Starch
  • 1 Msp Baking powder
  • 200 g Cream
  • 2 Pck. Cream stiffener
  • 200 g Quark
  • 50 g Sugar
  • 1 EL Vanilla sugar
  • 350 g Mandarins, drained
  • 1 Prise Powdered sugar

Preparation (7 steps)

Preheat oven

Preheat oven to 200°C top/bottom heat. Line a baking sheet with baking paper.

Prepare dough

6 min/99°F/Speed 4 99°F

Insert the stirring attachment. Add eggs, salt and sugar to the mixing bowl and whisk for 6 min./37°C/speed 4. Then whisk for another 6 min./speed 4.

Mix in dry ingredients

Remove the stirring attachment. Add flour, starch and baking powder and mix for 8 sec./speed 4.

Bake sponge cake

Spread the dough on the prepared baking sheet and bake in the hot oven for about 10 min.

Turn out and cool sponge cake

Sprinkle a kitchen towel with some water. Turn the baked sponge cake onto the kitchen towel, brush the baking paper with cold water and carefully peel it off after 20 seconds. Roll up the sponge cake with the kitchen towel and let it cool for approx. 30 min.

Prepare filling

Insert the stirring attachment. Add cream and cream stiffener to the mixing bowl and whip until stiff at speed 3.5 under visual contact without setting a time. Transfer. Add quark, sugar and vanilla sugar to the mixing bowl and mix for 2 min./speed 3 until smooth.

Finish filling and fill sponge roll

Fold in cream and mandarins. Roll out the sponge cake and spread with the mandarin quark filling. Carefully roll up again and serve sprinkled with powdered sugar.
