Description

With the Thermomix®, classic beef rolls with beef, mustard, bacon, onions and gherkins are particularly tender. This hearty main course is ideal for Sunday cuisine or festive occasions. Preparation takes about 120 minutes, 45 minutes of which is active work. The recipe is designed for 4 servings and is perfect as a hearty family meal.

Ingredients (20 ingredients)

  • 4 Stück Beef roulades
  • 4 EL Mustard
  • 100 g Bacon, sliced
  • 2 Stück Onions
  • 4 Stück Gherkins
  • 2 EL Oil or clarified butter
  • 2 Möhren Carrots
  • 100 g Celery
  • 1 Stück Leek stalk
  • 250 ml Red wine
  • 500 ml Beef broth
  • 1 Stück Bay leaf
  • 4 Stück Juniper berries
  • 2 EL Tomato paste
  • 100 ml Cream
  • 1 EL Sauce thickener, light
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 0.5 TL Paprika powder
  • 0.25 TL Marjoram, dried

Preparation (13 steps)

Chop onions

Peel and quarter the onions and put them in the mixing bowl. Chop for 3 seconds/speed 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Add mustard, tomato paste and spices

Add mustard, tomato paste, salt, pepper, paprika powder and marjoram to the onions in the mixing bowl and stir for 10 seconds/speed 3.

Prepare beef rolls

Lay out the beef rolls, spread with mustard and top with bacon, onions and gherkins. Roll up tightly and secure with kitchen twine or beef roll needles.

Sear beef rolls

Sear the meat in a separate pan with oil or clarified butter on all sides and then remove from the pan.

Prepare vegetables

Peel the carrots and celery and cut into coarse pieces. Clean the leek and cut into rings.

Chop vegetables

Put carrots, celery and leek in the mixing bowl and chop for 5 seconds/speed 4.

Sauté vegetables

Add the prepared vegetables to the onions in the mixing bowl and sauté for 5 minutes/120°C/speed 1.

Add beef rolls and remaining ingredients

Add the seared beef rolls, red wine and beef broth to the mixing bowl. Add bay leaf and juniper berries.

Simmer beef rolls

Close the lid and simmer for 90 minutes/100°C/reverse rotation speed 1. Leave the measuring cup on.

Prepare sauce

20 sec/Speed 8-10

After the cooking time, remove the beef rolls from the mixing bowl and keep warm. Remove bay leaf. Puree the sauce for 20 seconds/speed 8-10, slowly increasing the speed. Hold the lid tight!

Refine sauce

3 min/194°F/Speed 2 194°F

Add cream and sauce thickener to the mixing bowl and stir for 3 minutes/90°C/speed 2.

Season and serve

Season the sauce with salt and pepper and serve with the beef rolls.
