Description

These savory pancake rolls are a real eye-catcher on any buffet and taste simply delicious! I especially like to make them in the summer when the arugula is nice and fresh. The combination of the slightly salty ham, the creamy mozzarella and the fresh rocket is simply unbeatable. The preparation is super easy and quick, especially with the Thermomix®. The pancakes are prepared in no time and the filling can be varied as desired. If you like it a little spicier, you can add a few chili flakes. Ideal as finger food for parties or as a light lunch. The rolls can also be prepared well in advance and taken with you.

Ingredients (12 ingredients)

  • 100 g Flour
  • 2 piece Eggs (size M)
  • 100 ml Low-fat milk
  • 5 tbsp Carbonated mineral water
  • 1 pinch Salt
  • 125 g Mozzarella light
  • 2 tbsp Oil
  • 2 bunch Arugula
  • 150 g Cooked ham in wafer-thin slices (2% fat)
  • 200 g Cherry tomatoes
  • 2 tbsp White balsamic vinegar
  • 1 pinch Pepper

Preparation (10 steps)

Prepare pancake batter

Thermomix® Setting
20 sec/Speed 4

Add 100 g flour, 2 eggs, 100 ml low-fat milk, 5 tablespoons carbonated mineral water and 1 pinch of salt to the mixing bowl and mix for 20 sec/speed 4.

Let the dough rest

Let the dough rest in the mixing bowl for 10 minutes.

Bake pancakes

Grease a coated pan (26 cm Ø) with a little oil (a total of approx. 1 teaspoon) and heat. Bake 4 pancakes one after the other from the dough.

Prepare mozzarella

Cut 1 package (125 g) mozzarella into thin slices.

Top pancakes

Top ready-made pancakes with 2 bunches of arugula (except for a small amount for the vinaigrette), 1 package (150 g) cooked ham in wafer-thin slices and mozzarella. Place 16 (approx. 200 g) cherry tomatoes in a row on the mozzarella.

Roll up and cut the pancakes

Roll up the pancakes and cut into 4 slices each.

Skewer pancake snails

Place 2 pancake snails on a wooden skewer each.

Prepare vinaigrette

Thermomix® Setting
10 sec/Speed 3

Add 2 tablespoons white balsamic vinegar, 4 tablespoons water, salt and pepper to the mixing bowl and mix for 10 sec/speed 3. Add 2 tablespoons oil and mix for a further 5 sec/speed 3.

Add arugula

Thermomix® Setting
5 sec/Linkslauf Speed 2 Reverse

Cut the remaining arugula into fine strips, add to the mixing bowl and stir in for 5 sec/reverse rotation speed 2.

Serve pancake snails

Drizzle the pancake snails with the vinaigrette and serve.
