Description

This Thermomix® recipe for Ruggele cookies combines butter, flour, cream cheese and hazelnuts for a festive pastry. Preparation with the Thermomix® takes about 75 minutes and yields 16 servings. Ideal as finger food or dessert, especially suitable for the Christmas season. Thanks to the easy preparation, this recipe is a great family meal.

Ingredients (6 ingredients)

200 g Butter
300 g Flour
200 g Double cream cheese
40 g Brown sugar
40 g White sugar
40 g Finely ground hazelnuts

Preparation (6 steps)

Prepare dough

Thermomix® Setting

2 min/Kneading speed

Add butter, flour and double cream cheese to the mixing bowl and process with the Meistermix Patix dough knife for 2 min./kneading level to a smooth dough.

Cool dough

Remove the dough from the mixing bowl, wrap in plastic wrap and refrigerate covered for at least 30 minutes.

Prepare sugar-nut mixture

Mix brown sugar, white sugar and finely ground hazelnuts in a bowl.

Roll out and shape dough

Sprinkle the work surface with the sugar-nut mixture. Divide the dough into four equal pieces. Roll out each piece of dough on the sugar-nut mixture to the size of a cake divider. Press a cake divider onto the dough to obtain 16 equally sized, triangular pieces.
