Description

This rustic Easter ring cake is an explosion of spring flavors! Fresh spinach, aromatic garlic, and creamy ricotta cheese blend into a soft and flavorful dough, enriched with hard-boiled eggs that make it perfect for Easter brunch or as a delicious appetizer. The preparation is simple and quick thanks to the Thermomix®, which helps us obtain a homogeneous dough and perfect cooking. An original idea to bring a traditional dish to the table with a touch of creativity. Ideal to enjoy warm or cold, this ring cake is a true triumph of taste and color!

  • 150 g spinach
  • 2 clove garlic
  • olive oil
  • fine salt
  • 100 ml seed oil
  • 150 ml milk
  • 4 uova eggs
  • 50 g grated cheese
  • 150 g ricotta cheese
  • 300 g flour
  • 1 packet instant yeast for savory pies
  • 6 uova hard-boiled eggs

Preparation of the spinach

Insert 2 cloves of garlic into the bowl and chop for 3 Sec./Stufe 7. Add olive oil as needed and cook for 3 Min./120°C/Stufe 1.

Cooking the spinach

Add 150 g of fresh spinach, fine salt as needed and cook for 5 Min./100°C/Stufe 1. Remove the garlic cloves and let cool slightly.

Blending the spinach

Transfer the cooked spinach to a tall container. Add 100 ml of seed oil and 150 ml of milk. Blend with an immersion blender until a homogeneous puree is obtained.

Preparation of the dough

Insert 4 eggs, 50 g of grated cheese and fine salt as needed into the bowl. Mix for 20 Sec./Stufe 3.

Addition of the spinach puree

Add the spinach puree prepared previously and mix for 20 Sec./Stufe 3.

Incorporating the ricotta cheese

Add 150 g of ricotta cheese and mix for 20 Sec./Stufe 3.

Addition of the flour

Gradually add 300 g of flour and mix for 30 Sec./Stufe 4. Make sure no lumps form.

Addition of the yeast

Add 1 sachet of instant yeast for savory pies and mix for 10 Sec./Stufe 3.

Pouring the dough into the mold

Butter and flour a ring cake mold of 24-26 centimeters in diameter. Pour about half of the dough into the mold.

Arranging the hard-boiled eggs

Arrange 6 hard-boiled eggs inside, cover with the remaining dough and level the surface.

Baking in the oven

Bake the savory ring cake in a preheated static oven at 180 °C for 30 minutes. Before taking it out of the oven, to be sure, do the toothpick test.

Cooling and serving

Remove the savory ring cake from the oven, put it on a serving dish and let it cool for about ten minutes before cutting and serving.
