Description

This rustic tart with tomatoes and smoked bacon is a real summer delight! I often prepare it for a Sunday brunch or a sunny lunch. The crispy puff pastry contrasts wonderfully with the sweetness of the caramelized tomatoes and the smoky taste of the bacon. The melting mozzarella brings a touch of irresistible indulgence. It is a simple and quick recipe to make with the Thermomix®, perfect for impressing your guests without spending hours in the kitchen. Feel free to vary the pleasures by adding fresh herbs such as basil or oregano. A real treat!

Ingredients (7 ingredients)

  • 2 piece eggs
  • 50 cl cream
  • 10 g sugar
  • 350 g tomatoes
  • 300 g mozzarella
  • 150 g smoked bacon
  • 1 pâte puff pastry

Preparation (6 steps)

Pre-baked pastry

Preheat the oven to 180°C. Unroll the puff pastry in a tart pan and bake blind for 10 minutes in the oven.

Caramelizing the tomatoes

Put the sugar in the Thermomix bowl and caramelize: 3 Min./Varoma/Stufe 1.

Adding the tomatoes

10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the washed and sliced tomatoes to the bowl. Cook: 10 Min./100°C/Stufe 1/Linkslauf.

Preparing the filling

Spread the caramelized tomatoes on the pre-baked pastry. Add the thinly sliced smoked bacon and a layer of mozzarella.

Preparing the quiche mixture

Thermomix® Setting
10 sec/Speed 4

Put the eggs and cream in the Thermomix bowl. Mix: 10 Sek./Stufe 4.

Baking the quiche

Pour the egg and cream mixture over the filling. Bake for 35 minutes at 180°C.
