Description

This honey spelt cake is a poem! I especially like to bake it in autumn and winter, when the scent of honey and gingerbread spice fills the whole kitchen. The spelt flour gives it a slightly nutty note that harmonizes wonderfully with the sweet honey. It is super juicy and stays fresh for several days. Perfect for Advent coffee or just to enjoy. If you like, you can add a few chopped nuts or dried fruits to the dough. An absolute must for all cake lovers!

Ingredients (8 ingredients)

  • 120 g Butter (soft)
  • 250 g Honey (liquid)
  • 2 piece Eggs (size M)
  • 350 g Spelt flour Type 630
  • 1 tbsp Baking cocoa
  • 1 Pck. Baking powder
  • 1 tsp Gingerbread spice
  • 1 pinch Salt

Preparation (7 steps)

Preheat oven and prepare mold

Preheat the oven to 180 °C top and bottom heat. Grease a loaf pan (approx. 25 x 11 cm) with some butter.

Grate orange peel

Wash an orange and grate the peel with a fine grater. Set aside the grated peel.

Mix butter, honey and eggs

Put 120 g soft butter, 250 g liquid honey, 2 eggs (size M) and the grated orange peel into the mixing bowl and mix for 30 sec./speed 4.

Mix dry ingredients

15 sec/Speed 3

Put 350 g spelt flour type 630, 1 tbsp baking cocoa, 1 packet baking powder, 1 tsp gingerbread spice and 1 pinch of salt into the mixing bowl and mix for 15 sec./speed 3.

Mix dry and wet ingredients

20 sec/Speed 3

Add the flour mixture to the wet ingredients in the mixing bowl and mix for 20 sec./speed 3. If necessary, use the spatula to push down from the edge and mix again briefly.

Pour the dough into the mold and bake

Pour the dough into the prepared loaf pan, smooth it out and bake in the preheated oven for about 40 minutes. Do a stick test.

Let the cake cool and serve

Remove the honey cake from the mold, let it cool on a wire rack and sprinkle with powdered sugar as desired.
