Description

These tomato and goat cheese appetizer shortbreads are perfect for a cocktail reception or a summer brunch. The shortbread pastry, enriched with Parmesan and Gruyère, offers a crispy texture and a savory taste. The tomato compote, flavored with herbs from Provence, brings a touch of freshness and sweetness. The fresh goat cheese completes the whole with its creaminess and its slightly acidic taste. I often prepare them for family parties, and they always disappear in the blink of an eye! Feel free to vary the aromatic herbs according to your tastes.

Ingredients (12 ingredients)

  • 110 g Flour
  • 110 g Salted butter
  • 70 g Parmesan
  • 60 g Grated Gruyère
  • 50 g Olives in pieces
  • 20 ration Tomato coulis
  • 300 g Tomato(es)
  • 1 piece Shallot(s)
  • 1 c. à soupe Herbs from Provence
  • Olive oil
  • 150 g Fresh goat cheese
  • 20 g Tomato coulis

Preparation (11 steps)

Cheese, olives and butter in the bowl

Put the Parmesan, grated Gruyère, olives in pieces and butter cut into pieces in the Thermomix bowl. Mix 20 Sec./Stufe 5.

Adding flour and kneading

Thermomix® Setting
2 min/Kneading speed

Add the flour and tomato coulis in the Thermomix bowl. Knead 2 Min./Knetstufe.

Dough rest

Form a compact and homogeneous ball of dough. Wrap in cling film and let rest for 1 hour in the refrigerator. Preheat oven to 200°C.

Rolling out the dough

Roll out the dough with a rolling pin on a floured board.

Cutting out the shortbreads

Using a glass, cut out shortbreads one cm thick.

Decoration of the shortbreads

Place drops of tomato coulis with a knife, to decorate.

Baking the shortbreads

Bake for 20 min, until the shortbreads are golden brown. Let cool.

Preparation of the tomato compote

Thermomix® Setting

Peel and finely chop the shallot. Put the shallot in the Thermomix bowl and chop 3 Sek./Stufe 5. Add the olive oil and cook 3 Min./120°C/Stufe 1.

Cooking the compote

Add the diced tomatoes and herbs from Provence in the Thermomix bowl. Cook 10 Min./100°C/Stufe 1.

Assembly of mini-burgers

Place 1 tbsp of tomato compote on a shortbread, then add a portion of fresh goat cheese mixed with tomato coulis. Cover with another shortbread.

Gratin

Bake everything for 5 to 10 min at 180°C. Serve immediately!
