Description

These hazelnut-orange cookies from the Thermomix® are a festive pastry made with flour, sugar, butter, and cream. The total preparation time is 120 minutes, with an active working time of about 60 minutes. The recipe yields approximately 40 cookies. Ideal as finger food or dessert, especially suitable for Christmas time.

Ingredients (15 ingredients)

  • 350 g Flour
  • 100 g Sugar
  • 2 Stück Vanilla sugar
  • 200 g Butter or margarine
  • 1 EL Cream
  • 2 Stück Eggs
  • Flour for rolling out
  • 2 EL Milk
  • 50 g Chopped pistachios
  • 50 g Hazelnut flakes
  • Powdered sugar for dusting
  • 150 g Chopped hazelnut kernels
  • 150 g Marzipan paste
  • 75 g Beekeeper's honey, such as Breitsamer Imkergold finely creamy
  • 75 g Orange marmalade

Prepare the dough

Thermomix® Setting

Place flour, sugar, vanilla sugar, butter or margarine, and egg in the mixing bowl and knead with the Patix dough knife for 2 min./kneading stage to form a smooth dough.

Chill the dough

Wrap the dough in foil and refrigerate for 1 hour. After cooling, knead briefly again with the Patix dough knife on the kneading stage.

Prepare the filling

Cut the marzipan into pieces and add to the mixing bowl together with the chopped hazelnut kernels, beekeeper's honey, and orange marmalade. Process for 15 sec./speed 4 to a smooth mixture.

Roll out the dough and cut out cookies

Roll out the dough on a lightly floured work surface to about 3 mm thick and cut out round cookies.

Top the cookies

Place half of the cookies on a baking sheet lined with parchment paper. Spread a teaspoon of the honey-nut mixture in the middle of each.

Separate the eggs and assemble the cookies

Separate the eggs and brush the edge of the topped cookies with egg white. Place another cookie on top of each and press the edges together well with a fork.

Prepare the egg yolk

Place egg yolk and milk in the mixing bowl and mix for 5 sec./speed 3.

Brush and decorate the cookies

Brush the cookies with the egg yolk. Immediately sprinkle the hazelnut flakes in the middle and the chopped pistachios around the edge.

Bake the cookies

Bake the cookies in a preheated oven at 175°C (convection oven approx. 160°C) for approx. 15 minutes.

Cool and dust the cookies

Let the cookies cool on a wire rack and then dust with powdered sugar.
