Description

This aromatic Asia noodle soup with juicy prawns is an absolute highlight for lovers of Asian cuisine! I especially like to cook it when I need something quick, because it's on the table in less than half an hour. The combination of fresh vegetables, spicy broth and tender seafood is simply unbeatable. A dash of lime juice and some sesame seeds perfectly round off the taste experience. Ideal as a light lunch or warming dinner - simply delicious!

Ingredients (15 ingredients)

  • 2 clove Garlic
  • 1 piece Ginger
  • 0.5 bunch Coriander
  • 125 g Shiitake mushrooms
  • 2 piece Organic carrots
  • 2 piece Spring onions
  • 2 tbsp Sesame oil
  • 12 piece fresh king prawns, deveined
  • 1 tsp Chili flakes
  • 1.5 l Broth
  • 2 tbsp Sweet chili sauce
  • 6 tbsp Soy sauce
  • 150 g Mie noodles
  • 2 tbsp Lime juice
  • 4 tsp Sesame

Preparation (8 steps)

Prepare garlic, ginger and coriander

Thermomix® Setting

Put 2 cloves of garlic and 1 piece of ginger in the mixing bowl and chop for 3 sec./speed 7. Add 0.5 bunch of coriander and chop for 3 sec./speed 5. Transfer everything to a bowl and set aside.

Prepare vegetables

Clean 125 g shiitake mushrooms and cut into strips. Wash 2 organic carrots and 2 spring onions and cut into strips at an angle. Set everything aside.

Fry prawns

Heat 2 tbsp sesame oil in a pan. Fry 12 fresh king prawns, deveined, sharply on both sides and sprinkle with 1 tsp chili flakes. Remove from the pan and set aside. Briefly fry the shiitake mushrooms in the pan and set aside.

Sauté garlic and ginger

Put the prepared garlic-ginger-coriander mixture in the mixing bowl and sauté for 3 min./120°C/speed 1.

Fry carrots

Add the carrot strips and sauté for 2 min./120°C/speed 1.

Add broth and simmer

Put 1.5 l broth, 2 tbsp sweet chili sauce and 6 tbsp soy sauce in the mixing bowl and simmer for 10 min./100°C/speed 1.

Add noodles, prawns and mushrooms

Put 150 g mie noodles, the fried prawns and shiitake mushrooms and the spring onions in the mixing bowl and simmer for 3 min./100°C/reverse rotation speed 1.

Season and serve

Season the soup with 2 tbsp lime juice and possibly a little more soy sauce. Divide the soup onto plates and sprinkle with the remaining coriander and 4 tsp sesame seeds.
