Description

This Thermomix® recipe for savory blini Christmas trees is a vegetarian finger food with milk, yeast, flour and eggs.   • 200 ml Milk
  • 10 g Yeast
  • 1 TL Sugar
  • 200 g Wheat flour Type 405
  • 1 EL Butter
  • 1 Prise Salt
  • 2 Eggs
  • 3 EL Rapeseed oil
  • 1.5 Lemons
  • 1 Dose Chickpeas (265 g drained weight)
  • 2 Zehe Garlic
  • 2.5 TL Tahini Paste
  • 3 EL Olive oil
  • Cumin (ground)
  • Paprika powder
  • 3 Zucchini
  • 1 Stück Cheese (0.5 cm thick)
  • 1 EL pink Peppercorns

Preparation (11 steps)

Heat milk and prepare yeast

Thermomix® Setting
2 min/99°F/Speed 1, 10 sec/Speed 3 37

Add 200 ml milk to the mixing bowl and heat for 2 min./37°C/speed 1. Crumble 10 g yeast and add to the mixing bowl together with 1 tsp sugar and 2 tbsp wheat flour type 405. Stir for 10 sec./speed 3.

Let the yeast mixture rise

Cover the mixing bowl and let the yeast mixture rise in a warm place for 15 minutes.

Prepare dough

Thermomix® Setting
2 min/122°F/Speed 1, 2 min/Kneading speed 50

Add 1 tbsp butter to the mixing bowl and melt for 2 min./50°C/speed 1. Add 180 g wheat flour type 405, 1 pinch of salt and 2 eggs to the yeast milk and knead for 2 min./kneading level to a smooth dough.

Let the dough rise

Cover the dough in the mixing bowl and let it rise again for 20 minutes.

Bake blinis

Heat 2 tbsp rapeseed oil in a coated pan. Add 1 tbsp of dough per blini to the pan and fry over medium heat until golden brown on both sides. Set the finished blinis aside.

Prepare hummus

Thermomix® Setting
3 sec/Speed 7, 30 sec/Speed 8, 10 sec/Speed 3

Squeeze out 1.5 lemons. Drain 1 can of chickpeas (265 g drained weight). Peel 1 clove of garlic and add to the mixing bowl. Chop for 3 sec./speed 7. Add chickpeas, 3 tbsp olive oil, lemon juice and 2.5 tsp tahini paste and puree for 30 sec./speed 8. Season with salt, cumin and paprika powder and stir for another 10 sec./speed 3.

Spread blinis with hummus

Spread the prepared hummus on the blinis.

Prepare zucchini

Wash and dry 3 zucchini and cut into thin strips with a peeler. Peel 1 clove of garlic and add to the mixing bowl. Chop for 3 sec./speed 7.

Sweat zucchini

Thermomix® Setting
3 min/248°F/Speed 1, 3 min/212°F/Linkslauf Speed 1 120 Reverse

Add 1 tbsp rapeseed oil to the mixing bowl and heat for 3 min./120°C/speed 1. Add the zucchini slices and the chopped garlic and sauté for 3 min./100°C/reverse rotation speed 1. Season with salt.

Form zucchini trees

Arrange the zucchini strips to form a Christmas tree that is thicker at the bottom and thinner at the top. Secure to the blinis with toothpicks.

Cut out cheese stars and decorate

Cut out stars from 1 piece of cheese (0.5 cm thick) with a cookie cutter and place on the toothpicks as Christmas tree tops. Garnish with 1 tbsp pink peppercorns.
