Description

These puff pastry pudding pockets are a delicious pastry that is ideal for brunch or as a sweet treat. With a creamy vanilla pudding filling and a crispy puff pastry coating, they are easy to prepare and perfect for any occasion. The preparation time is about 45 minutes, and the recipe yields 8 servings.

  • 250 ml Milk
  • 0.5 Pck. Vanilla pudding powder
  • 25 g Sugar
  • 1 Rolle fresh puff pastry from the refrigerated section
  • 1 Stück Egg size M
  • 1 EL Milk
  • Flour for the work surface
  • Icing sugar for dusting

Prepare pudding filling

Thermomix® Setting

Add 200 ml milk to the mixing bowl and heat for 3 min./100°C/speed 1.

Mix pudding powder

In a small bowl, mix 1/2 pack. vanilla pudding powder with 25 g sugar and the remaining 50 ml milk.

Cook pudding

Pour the pudding mixture into the hot milk in the mixing bowl and briefly bring to a boil for 5 min./90°C/speed 2, stirring constantly, until the pudding thickens.

Let pudding cool

Remove the pot from the stove and let the pudding cool.

Prepare puff pastry

Roll out the puff pastry on a floured work surface and cut into 6-8 equal rectangles with a knife.

Preheat oven

Preheat the oven to 200 °C top/bottom heat (180 °C convection).

Spread pudding and form pockets

Spread 1-2 tsp of vanilla pudding on each half of the dough and brush the edges with a little water. Fold the dough pieces together diagonally and press the edges firmly with a fork.

Prepare egg wash

Separate 1 egg and whisk the egg yolk with 1 tbsp milk.

Brush dough pockets

Brush the dough pockets with the egg yolk-milk mixture.

Bake

Bake the puff pastry pudding pockets for 15-20 minutes until golden brown.

Serve

Let the puff pastry pudding pockets cool briefly and sprinkle with a little icing sugar.
