Description

This Asian salad is an absolute blast! The creamy peanut dressing, slightly sweet and with a hint of chili, harmonizes perfectly with the crunchy Chinese cabbage, carrots and bell pepper. The edamame provide an extra portion of protein. I especially like to make it in the summer because it is so refreshing. And the best thing: it is super quick to prepare and can be prepared very well. If you like it a little spicier, you can simply add a few more chili flakes to the dressing. A great dish for a light lunch or as a side dish for grilling!

Ingredients (20 ingredients)

  • 2 tbsp Peanut Buttercreamy
  • 2 tbsp Rice Vinegar
  • 2 tbsp Lime Juicefreshly squeezed
  • 3 tbsp Oilevtly. Peanut oil
  • 1 tbsp Soy sauce
  • 2 tbsp Honey
  • 2.5 tbsp Sugar
  • 2 clove Garlichopped
  • 2 cm Gingershelled and chopped
  • 1 tsp Salt
  • 0.25 tsp Chili flakes
  • 2 tbsp Cilantro
  • 1 piece Chinese cabbagesliced into strips or also white cabbage and red cabbage mixed
  • 2 piece Carrot(s)julienned
  • 1 piece Bell pepper(s), redcut into fine strips
  • 1 piece small Cucumber(s)seeded and finely chopped
  • 100 g Edamamecooked and peeled
  • 2 piece Spring onion(s)cut into fine rings
  • 1 etwas Cilantro
  • 1 einige Peanuts

Preparation (5 steps)

Chop garlic and ginger

Thermomix® Setting
3 sec/Speed 7

Put 2 cloves of garlic and 2 cm of peeled ginger into the mixing bowl and chop for 3 seconds/speed 7. Scrape down with the spatula.

Prepare dressing

Thermomix® Setting
20 sec/Speed 4

Add 2 heaped tablespoons of peanut butter, 2 tablespoons of rice vinegar, 2 tablespoons of freshly squeezed lime juice, 3 tablespoons of oil, 1 tablespoon of soy sauce, 2 tablespoons of honey, 2.5 tablespoons of sugar, 1 teaspoon of salt and 0.25 teaspoon of chili flakes to the mixing bowl and stir for 20 seconds/speed 4.

Add coriander

Thermomix® Setting
5 sec/Speed 5

Add 2 tablespoons of coriander and chop for 5 seconds/speed 5. Put the dressing in the refrigerator until serving.

Mix salad

Put 1 Chinese cabbage cut into strips (or white cabbage and red cabbage mixed), 2 julienned carrots, 1 red bell pepper cut into fine strips, 1 small seeded and finely chopped cucumber, 100 g cooked and peeled edamame and 2 spring onions cut into fine rings in a large bowl and mix.

Arrange salad

Mix the dressing with the salad just before serving. Sprinkle the prepared salad with some coriander and peanuts.
