Description

This oriental bulgur salad is an absolute highlight! I especially like to make it in the summer because it is so refreshing. The bulgur is combined with crunchy vegetables, aromatic herbs and a tangy lemon dressing. The chickpeas provide an extra portion of protein. The salad is not only super delicious, but also vegan and can be prepared wonderfully. Perfect for parties, barbecues or simply as a light lunch. If you like, you can use mint instead of coriander - both taste delicious!

Ingredients (15 ingredients)

  • 500 g Bulgur
  • 100 g Chickpeas
  • 5 piece Tomatoes
  • 2 piece Bell pepper(s)
  • 1 piece Cucumber(s)
  • 4 clove Garlic
  • 3 piece Lemons, juice of
  • 5 piece Spring onion(s)
  • 1 bunch Parsley
  • 1 bunch Cilantro
  • 150 ml Olive oil
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 etwas Salt
  • 1 etwas Pepper

Preparation (8 steps)

Prepare chickpeas

Thermomix® Setting
120 min/212°F/Speed 1 100

Either soak the chickpeas in water the night before and then cook in the mixing bowl at 100°C/speed 1 for about 2 hours until they are soft. Alternatively, canned chickpeas can also be used.

Prepare vegetables

Cut tomatoes, cucumber and bell peppers into small cubes. Cut spring onions into fine rings and set aside.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put lemon juice, olive oil, garlic cloves (previously chopped 3 sec./speed 7), cumin, ground coriander, salt and pepper into the mixing bowl and stir for 10 sec./speed 3.

Roast bulgur

Roast the bulgur in a pan without fat over low heat until it smells slightly. Stir constantly so that it does not burn. Then remove from the stove.

Prepare bulgur

Bring water (according to package instructions) to a boil in a kettle, pour over the bulgur and let it swell until the water is completely absorbed.

Chop herbs

Roughly chop parsley and cilantro and set aside.

Mix salad

Drain the cooked chickpeas and put them in a large bowl. Pour the prepared dressing over it and mix well. Stir in the soaked bulgur and let it sit for a short time. Season with salt and pepper.

Add vegetables and herbs

Add the diced vegetables, spring onions and chopped herbs to the salad and mix everything well together.
