Description

This Asian noodle salad with udon noodles and crunchy edamame is an absolute highlight! The Chinese cabbage provides a fresh note, while the dressing made from sesame oil, rice vinegar and soy sauce gives the salad its typical Asian taste. The salad is perfectly rounded off with fresh coriander and fried onions. Ideal for a light lunch, a picnic or as a side dish for grilling. Can be prepared super well and tastes delicious even the next day!

Ingredients (11 ingredients)

  • 400 g precooked Udon noodles
  • 200 g Edamame (frozen)
  • 0.5 piece Chinese cabbage
  • 2 piece Shallots
  • 2 piece Spring onions
  • 100 g fresh Coriander
  • 6 tbsp Sesame oil
  • 4 tbsp Rice vinegar
  • 2 tbsp Soy sauce
  • 2 tbsp Chili flakes
  • 2 tbsp Fried onions

Preparation (8 steps)

Prepare udon noodles

Prepare the udon noodles according to the package instructions. Let the edamame thaw.

Chop Chinese cabbage

Thermomix® Setting

Cut half a head of Chinese cabbage into coarse pieces, put it in the mixing bowl and chop for 5 sec./level 4. Place in a bowl with some salt and knead until soft.

Chop shallots

Thermomix® Setting
3 sec/Speed 5

Peel the shallots, halve them, put them in the mixing bowl and chop for 3 sec./level 5.

Prepare spring onions

Wash the spring onions and cut them into fine rings. Wash the coriander, shake dry and pluck the leaves from the stems.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put 6 tbsp sesame oil, 4 tbsp rice vinegar, 2 tbsp soy sauce and 2 tbsp chili flakes in the mixing bowl and stir for 10 sec./level 3.

Roast sesame seeds

Thermomix® Setting
3 min/248°F/Speed 1 120

Roast the sesame seeds in a fat-free pan until golden brown. Alternatively: Put the sesame seeds in the mixing bowl and roast for 3 min./120°C/level 1 without a measuring cup.

Mix salad

Put the noodles with the Chinese cabbage, edamame, shallots, spring onions and dressing in a bowl and mix well.

Serve salad

Serve the salad sprinkled with sesame seeds, coriander and fried onions.
