Description

This salmon in creamy spinach and lemon sauce is a recipe that I often prepare when I want something quick, tasty and healthy. The combination of salmon with the creamy spinach sauce is simply delicious. The acidity of the lemon balances the richness of the sauce, creating a very balanced dish. It is perfect for a weeknight dinner or even a special lunch. Also, it is a great way to incorporate more vegetables into your diet. I hope you enjoy it as much as I do!

Ingredients (8 ingredients)

  • 2 piece Salmon loin
  • 15 ml Extra virgin olive oil
  • 2 clove Garlic
  • 200 g Fresh spinach
  • 1 piece Lemon zest
  • 0.5 piece Lemon juice
  • 75 g Mascarpone cheese
  • 75 ml Milk

Preparation (4 steps)

Prepare the salmon

Heat a frying pan over medium-high heat. Sear the salmon loins lightly on all sides. Do not cook them through. Remove from the pan and set aside.

Chop the garlic

Place the garlic cloves into the bowl and chop 3 Sec./Level 7.

Sauté the garlic and spinach

Thermomix® Setting
5 min/212°F/Speed 2 100 Reverse

Add the extra virgin olive oil to the bowl and sauté the garlic 3 Min./120°C/Level 1. Add the fresh spinach, lemon zest, lemon juice, mascarpone cheese and milk. Season with salt and pepper to taste. Cook 5 Min./100°C/Level 2, counter-clockwise rotation, until the spinach softens.

Cook the salmon in the sauce

Pour the sauce into a microwave-safe container. Place the salmon loins on top. Cover with cling film, make a couple of holes and cook in the microwave for 2 Min. at maximum power. Serve immediately.
