Description

This tomato sauce with zucchini and carrots is a versatile and light dish that is ideal as a base for pasta or as a side dish. Preparation in the Thermomix® takes about 45 minutes and yields 4 servings. It is vegetarian, vegan and rich in vegetables, making it a healthy choice.   • 250 g Onion
  • 40 g Extra virgin olive oil
  • 2 Zehen Garlic
  • 150 g Zucchini
  • 100 g Carrots
  • 50 g Celery stalk
  • 500 g Chunky tomatoes
  • 1 TL Salt
  • 0.5 TL Pepper
  • 1 TL Oregano
  • 1 TL Basil
  • 1 Prise Sugar

Preparation (7 steps)

Prepare vegetables

Wash and roughly chop the zucchini, carrots and celery. Peel and quarter the onion. Peel the garlic.

Chop vegetables

Put 250 g onion in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add 40 g extra virgin olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Chop garlic

Add 2 cloves of garlic to the onions in the mixing bowl and chop for 3 sec./level 7.

Chop remaining vegetables

Add 150 g zucchini, 100 g carrots and 50 g celery stalk to the mixing bowl and chop for 5 sec./level 5.

Add tomatoes and cook

Thermomix® Setting
25 min/212°F/Speed 1 212°F

Add 500 g chunky tomatoes, 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano, 1 tsp basil and 1 pinch of sugar to the mixing bowl and cook for 25 min./100°C/level 1. Leave the measuring cup on.

Season and serve

Season the tomato sauce with zucchini and carrots with salt and pepper to taste and serve.
