Description

This creamy Hollandaise sauce is an absolute classic and prepared in no time with the Thermomix®! I especially like to make it with asparagus, but it also tastes delicious with fish or vegetables. The preparation is really easy and guaranteed to succeed. The gentle heating in the Thermomix® makes the sauce particularly creamy and airy. A real treat for special occasions or just when you want something a little finer. Try it out, you will be thrilled!

Ingredients (4 ingredients)

  • 125 g Butter
  • 4 piece Egg yolks
  • 3 tbsp White wine
  • 1 tbsp Lemon juice

Preparation (4 steps)

Melt butter

3 min/122°F/Speed 1 50

Add 125 g butter to the mixing bowl and melt for 3 min./50°C/speed 1.

Prepare Hollandaise sauce

7 min/158°F/Speed 4 70

Pour the melted butter into another bowl and clean the mixing bowl. Add 4 egg yolks, 3 tbsp white wine and 1 tbsp lemon juice to the mixing bowl. Beat for 7 min./70°C/speed 4 without measuring cup.

Slowly pour melted butter into the mixing bowl with the knife running (speed 2). 1 min./speed 2.

Season the sauce with salt and pepper and serve.
