Diese geröstete Tomatillo Salsa ist ein echter Knaller! Ich mache sie besonders gerne im Sommer, wenn die Tomatillos frisch vom Markt kommen. Die leichte Schärfe der Poblano und Serrano Chilis harmoniert perfekt mit der Säure der Tomatillos. Ein absolutes Muss für jeden Taco-Abend oder als Dip für Tortilla-Chips. Die Zubereitung im Thermomix® ist super einfach und schnell. Wer es milder mag, kann die Chilis vorher entkernen. Ein Schuss Limettensaft am Ende rundet den Geschmack ab. Diese Salsa ist vegetarisch und glutenfrei.

Ingredients (7 ingredients)

  • 2 piece fresh poblano chile peppers
  • 2 piece serrano chile peppers
  • 6 piece fresh tomatillos, husks removed
  • 1.5 slice white onion
  • 2 clove garlic
  • salt
  • 1 tablespoon chopped fresh cilantro (Optional)

Preparation (5 steps)

Grilling the Peppers and Tomatillos

Preheat an outdoor grill for high heat, and lightly oil the grate. Lay the poblano peppers, serrano peppers, and tomatillos on the hot grill, and cook, turning every 2 minutes, until the pepper skins are evenly charred and blackened, and the tomatillos have turned pale yellow and started to ooze juice, about 10 minutes. Remove the vegetables from the grill.

Preparing the Grilled Vegetables

Scrape off most of the burned pepper skin, cut the stems off, cut the peppers in half the long way, and remove the seeds.

Chopping Onion and Garlic

Place the white onion slice and garlic cloves in the mixing bowl. Chop for 3 seconds / speed 7.

Adding Peppers and Tomatillos

Add the prepared poblano peppers, serrano peppers, and tomatillos to the mixing bowl. Pulse for 4 seconds / speed 5 to roughly chop.

Finalizing the Salsa

Add salt to taste. Pulse for 4 seconds / speed 6 or more times to the desired smoothness. Stir in the chopped fresh cilantro (optional).
