Description

This aromatic marinade with herbs and citrus fruits is a real delight for the taste buds! I have used it for years to enhance my grilled fish, but it also goes wonderfully with vegetables or even white meats. The freshness of coriander and parsley, combined with the acidity of lemon and bergamot, creates an explosion of flavors in the mouth. Easy and quick to prepare, this homemade chermoula is perfect for bringing a touch of exoticism to your everyday dishes. A real culinary favorite, ideal for the summer season and barbecues with friends!

Ingredients (10 ingredients)

  • 1 gros bouquet coriander
  • 1 gros bouquet parsley
  • 5 cl olive oil
  • 3 gousses garlic
  • Lemon juice
  • Bergamot
  • 1 c. à c. cumin
  • 0.5 c. à c. hot pepper
  • 0.25 c. à c. pepper
  • Salt or fine salt

Preparation (3 steps)

Chop the herbs and garlic

Thermomix® Setting
5 sec/Speed 7

Put the bunch of coriander and the bunch of parsley in the Thermomix bowl and chop finely for 5 Sek./Stufe 7. Add the garlic cloves and chop again for 3 Sek./Stufe 7. Scrape the sides of the bowl with the spatula.

Add the spices and lemon juice

Thermomix® Setting
10 sec/Speed 3

Add the salt, pepper, cumin, hot pepper and lemon juice to the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Incorporate the olive oil

Thermomix® Setting
15 sec/Speed 2

Add 5 cl of olive oil and bergamot to the Thermomix bowl. Mix gently for 15 Sek./Stufe 2.
