Description

This potato salad is a real classic and tastes good to everyone! The basis is made up of waxy potatoes, which I cut into slices after cooking. A spicy broth with onions and mustard provides the special aroma. Pickled gherkins and a creamy sauce round things off. The salad is perfect as a side dish for grilling or simply as a filling dish. In summer, I like to refine it with fresh herbs or radishes. A great recipe that can be varied wonderfully!

Ingredients (8 ingredients)

  • 2 kg Potatoes, waxy
  • 1 piece Onion(s), medium-sized
  • 250 ml Vegetable broth or poultry broth
  • 3 tbsp White wine vinegar, mild
  • 2 tbsp Dijon mustard with green pepper
  • 200 g Mayonnaise
  • 6 piece Pickled gherkin(s), small
  • 1 etwas Gherkin liquid

Preparation (5 steps)

Cook potatoes

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Place 2 kg of waxy potatoes in the simmering basket and cover with water. Add some salt to the mixing bowl. Insert the simmering basket and cook for 30 min./Varoma/speed 1. Then drain the potatoes, peel them and let them cool. Then cut into thin slices.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Put 1 medium-sized onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down from the edge with the spatula.

Prepare broth

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 250 ml vegetable broth or poultry broth and the chopped onion to the mixing bowl and cook for 3 min./100°C/speed 1. Add 3 tbsp white wine vinegar and let cool.

Add mustard

Thermomix® Setting
10 sec/Speed 3

Add 2 tbsp Dijon mustard with green pepper to the mixing bowl and stir for 10 sec./speed 3.

Mix salad

Pour the broth-onion-mustard mixture over the potato slices and stir in carefully. Add 6 small, finely chopped pickled gherkins and some gherkin liquid. Add 200 g mayonnaise and carefully fold in. Let the salad sit.
